Book Review: Salt Smoke Time
“Salt” seems to be an important word to put in a book title these days. Samin Nosrat’s Salt Fat Acid Heat was a bestseller that was turned into an addictive Netflix series. Now Will Horowitz has written Salt Smoke Time, a compendium of methods and recipes using foraged and preserved ingredients. He wants readers to “relearn the past,” but how many of us will be foraging reindeer lichen or making chile ash paste? Some cookbooks are to read, and others to cook from – and this one is a fascinating read.
